feat(tables): Indicador ordenación ▴/▾ Unicode en headers

- SortDirection.symbol() ahora retorna ▴/▾ en vez de ^/v
- AdvancedTable usa los mismos glifos Unicode
- VirtualAdvancedTable ya usaba symbol()
